This Breakfast Strata is perfect for your family’s Christmas Morning or delicious party food for a Holiday Brunch.  It was easy to make and is especially great for holidays because you make it in advance.  It takes no time at all when you are your busiest, enjoying family or guests.

When I was going through the adoption process, I started planning for the day when we would celebrating holidays with a child.  I wanted to be creating warm, happy holiday memories for my family.  What do you remember from when you were a kid?  For me, I remember the little things that we did every year.  Things that were repeated season after season and became a family tradition.  I wanted to continue, not only those, but create new traditions that my daughter would remember and do with her children.

Christmas morning is one of those things I think we all remember.  Waking up on that magical day of days.  We’ve been waiting excitedly, even counting down the days.  Christmas was finally here!  And it is the original pajama party – the whole family celebrates in their pajamas.  What a way to start the day!  Warm, happy, excited, with presents and laughter…  Christmas morning is a precious memory to cherish.

Our Christmas traditions include leaving cookies and milk for Santa, reindeer food out on the lawn, going to sleep early so the elves can decorate with their special Christmas magic, and wearing matching Christmas pajamas.  On Christmas morning, my daughter wakes us up so we can all go down the stairs together to see what the elves and Santa have left for us.  Special decorations and…. presents!  While Daddy makes the coffee, we start opening.  Soon it’s time for breakfast!  There is always a special breakfast on that magical morning with pancakes, or waffles, or cinnamon rolls.  Something unusual that we don’t have very often.  This year, it’s going to be a Christmas Morning Breakfast Strata.  I love how the house is filled with a wonderful smell as this strata bakes in the oven.  It’s made the night (or day) before, so you can just pop it in the oven when you wake up and fill the house with wonderful smells while you open gifts.  Forty-five minutes later and it’s ready to eat.  Yum……….

Christmas Morning Breakfast Strata Recipe

15 ounces Chorizo Sausage

2 medium Green Peppers

2 medium Red Peppers

10 slices of a hearty bread

2 cups Shredded Cheddar Cheese

1 cup Milk

8 Eggs

1 tablespoon Chipotle Tabasco Sauce

Directions

  • Cook the chorizo in a frying pan on medium high heat.  Crumble the meat as it’s cooking.  Drain well.
  • While the meat is cooking, chop the green and red peppers into small pieces.

  • Set aside the cooked meat and saute the peppers.

  • Cut the crusts off the bread.

  • Spray a 9×9 dish with nonstick cooking spray.  Layer bread, then half of the meat, peppers and cheese.  Then use remaining ingredients and repeat another layer of bread, meat, peppers and end with cheese on top.

  • Beat eggs, add milk and tabasco.  Pour over ingredients in dish.
  • Cover and refrigerate overnight or for at least four hours.

  • Bake at 350 degrees for 45 minutes.

  • Remove from oven, slice and serve.

What makes this strata recipe unique and delicious is the chipotle flavor.  Our family loves the smoky, flavorful addition of chipotle to many recipes.  It adds spiciness without heat.  Did you know Tabasco makes many flavored sauces?  Three of my favorites are the Tabasco Original Red, Jalapeño, and Chipotle flavored sauces. I’ve been using the Original Red to spice up my tomato juice for years but it is the Tabasco Chipotle that is my favorite.  It is a versatile, flavor enhancer for all food!   I made bean burritos yesterday and by mixing the Tabasco Chipotle into the refried beans it added just the perfect flavor.  YUM!

    Every year since I was a kid we left out cookies and milk for Santa. A typical Christmas morning breakfast at our house was just hot chocolate because we were too excited to eat. We were all so busy unwrapping gifts and looking through stockings to think about food. This sounds really yummy, though!
