I like to make an easy dinner, that requires little or no prep, and then use the cooking time to do something fun with my family. If you try to make everything in a meal as simple as possible, then there is time to concentrate on one fun part with your kids! In going with the Italian theme, this time we decided to try making Italian Soda. It’s a customize, make-your-own beverage that let’s everyone experiment and taste each others results. Built-in giggling and laughter!
I chose Bertolli Chicken Florentine for the main part of the meal. It is so amazingly easy. The directions actually made me giggle because they are so easy. Pour contents of bag into a skillet and cook on medium heat for 12 minutes. That’s it! For sides, just pop the bread in the oven, toss the salad and you have time to spare for something fun. Ba-bam!
Bertolli Chicken Florentine is sooooo delicious. My daughter asked for a bigger spoon because she wanted to be able to eat more! It’s farfalle (I had to look up how to say that) pasta, otherwise known as bow-tie. The sauce is made with Parmesan and Romano cheese that I characterized as “grown-up mac and cheese”. It contains white wine, but no worries for the kiddos, any alcohol cooks off. There are large chunks of chicken. Pieces of cooked spinach add color and make it “Florentine”! Yum! I think it truly put everyone at the dinner table in a better mood to have played with the Italian Soda while the Chicken Florentine cooked and then to sit down to such a delicious meal. And don’t forget to say “Mangia”! It means “eat” in Italian. A college friend of mine had an Italian grandma who would always tell us to “mangia, mangia!”

Back to our Italian Soda. Are you familiar with Italian Soda or is it something new to you? My mom joined us for dinner and she had never heard of it. It’s really simple, just flavoring in sparkling water, with a touch of cream, if you’d like. What makes it fun is all the options! In addition to the Chicken Florentine, bread, and salad, I picked up a Salted Caramel flavored syrup at our local Kroger. But I also wanted something fruity. I ran into a friend of mine at the store who happens to be a chef and told her what I was looking for. She said, “Why not make your own?” Of course! It was so easy. Here’s how to make blueberry, but you could do this with just about any fruit.
Blueberry Flavored Syrup
1 cup of frozen blueberries
1/4 cup of sugar
1/4 cup of water
Combine ingredients in a small saucepan. On medium-high heat, bring to a boil. Cook for about 10 minutes until desired consistency. Mash with a potato masher. Strain and let cool before adding to soda (otherwise it melts all your ice!). Yup, did that!
Add 1-2 tablespoons to a glass of crushed ice, then fill with sparkling water. Add a splash of cream. Garnish with whipped cream, fresh fruit, or a sprig of mint. Experiment with different ingredients and garnishes. Have fun! Don’t forget the toasts!
