French Onion Soup Gratinee

I love ordering French Onion Soup Gratinee in restaurants.  Especially when “the weather outside is frightful” and cold, winter winds are blowing, onion soup with toasted bread and melty cheese is delicious comfort food.  If you’ve been reading Kelly’s Lucky You for awhile, you know I’m a Maytag Brand Ambassador and have been trying new Maytag appliances.  My mission for December was to write a post about the features of the stove.  Searching for a recipe, I stumbled upon one for French Onion Soup Gratinee and thought that would be a perfect one for highlighting the things I love about my Maytag gas range.  So come along with me, and find out how to make yummy restaurant-quality French Onion soup at home… in your pajamas… without going out in the cold!

French Onion Soup Gratinee

Peel 4 large onions, cut thin slices.  (Any suggestions for peeling onions without tears?) Melt 1/2 cup of unsalted butter in a large skillet, add onions and cook over low heat.  This brings up my favorite feature of my Maytag range.  There are five burners!  Yup, five!  And they are different power levels.  How cool is that?  My favorite is what we call the “MORE POWER” burner.  It’s got 17,000 BTU of power, and can boil water faster than I thought possible.  By the way, Maytag calls it the Speed Heatâ„¢ burner. On the opposite side of the spectrum, there is   The right rear burner is the Flex-Choiceâ„¢ Burner .  The Flex-Choiceâ„¢ feature allows for more precise simmering and low temperature cooking.

Because I’m cooking large skillet-low heat, I used the middle burner.  There was plenty of room for my very large skillet – another great feature are the die-cast metal grates that go completely across the top of the range.  This allows you to put cookware anywhere on top of the range and to move a piece of cookware by sliding rather than having to pick it up and put it back down.

Cook the onions for 20 minutes and add 1/2 teaspoon of sugar to help with carmelization.

Cook onions for an additional 20-25 minutes until onions are a golden brownish color.

Combine these ingredients in a dutch oven/soup cookware:  cooked onions, 6 cups of beef stock; 2 cups of chicken stock; 1/2 cup of dry sherry; 2 sprigs of fresh thyme; 1 bay leaf, salt and pepper to taste.  Bring to a boil, then reduce heat and simmer gently for one hour.  Now, I’m going to use my Flex-Choiceâ„¢ burner that allows for more precise simmering!

While my soup is simmering, I’m going to use my oven to make toasted French bread.  One of my favorite features on the oven is that the display shows the temperature as the oven warms up, so you can see it go from 100 to 200 etc. and know how close to full temperature you are.  In this case, I’m going to be broiling to toast the slices of baguette on a cookie sheet.

One of the things about the oven that my husband noticed right away was the design of the bottom rack.  There are three racks in this huge oven and the bottom one is a special “Maximum Capacity” rack.  Instead of being flat, it goes down to use the space all the way to the bottom of the oven!  Usually the space below the bottom rack is wasted but now you can use it.  That’s just plain smart!

7 Bread Toasting

This Maytag gas range also has EvenAir Convection.  According to Maytag, “In a convection oven, the fan-circulated hot air continually distributes heat more evenly than the natural movement of air in a standard thermal oven. This movement of hot air helps maintain a consistent temperature throughout the oven, cooking foods more evenly, crisping surfaces while sealing in moisture and yielding crustier breads.  With convection cooking, most foods can be cooked at a lower temperature or at a shorter time. This range automatically reduces the set oven temperature by 25°F (15°C) for convection cooking. During convection cooking, the bake and broil burners and convection element cycle on and off in intervals to maintain the oven temperature, while the fan circulates the hot air.”

2012-12-21The other unique feature about the Maytag is the Aqua-Lift Cleaning Technology.  One oven I used to use, had the yicky (that’s a technical term) black, rough interior that was self-cleaning.  I thought it was more always-yucky.  The Maytag is the smooth, porcelain interior, with a coating that is activated by water.  The surface releases burned on food.  To clean it, you put 2 cups of water on the floor of the oven, and press clean.  40 minutes later you can wipe out the burned on food.  It’s easy-peasy!

8 Assembly

Okay, the bread is toasted and I’m going to grate 6 ounces of Gruyere cheese and 1 ounce of Parmesan cheese.  Assembly time!  Fill a bowl with the mouth-watering onion soup, float the toasted bread on top, cover with cheese.  Here’s a secret to get a bubbly, brown top – sprinkle just a bit of paprika on top.  Pop it back into the broiler.  Watch closely and take out when the cheese is bubbling.  Sit down with a glass of crisp white wine, and enjoy this delicious comforting dish from your favorite corner bistro – your own kitchen and Maytag gas range!

9 Done
