I started eating salmon because my doctor recommended it and now it’s become a weekly staple in our family. By adding different flavored sauces and side dishes, we can keep variety and freshness even though we eat it every week. Thanks to Litehouse Foods, it’s easy to try different herbs and sauces. Litehouse is an employee-owned company ( I love that! ) that has been creating deliciousness for over 50 years.
Baked Salmon with Lemon Dill Sauce
1 tablespoon of olive oil
4 oz Salmon fillet per person
1 lemon
salt and pepper to taste
Preheat oven to 425 degrees. Use olive oil to lightly coat the bottom of the baking dish. Place salmon skin-side down, in dish. Squeeze lemon juice on top of fish, then sprinkle with dill, salt and pepper. Remove yellow peel from lemon and place in dish. Bake for 20 minutes. Fish is done when it flakes easily with a fork and color is solid pink.
We prefer wild-caught Sockeye Salmon that is flash frozen right after catching. I buy the kind that is shrink-wrapped in individual portions. Because it goes from frozen to cooked, it is almost as good as fresh caught.
Lemon Dill Sauce
1 container of Greek yogurt
1 tablespoon of Litehouse Instantly Fresh Dill
1 tablespoon of lemon juice
pepper, to taste
Combine ingredients in a small bowl and serve on top of salmon fillet. Enjoy!

Asparagus Bleu
1 pound of fresh asparagus spears
1 cup of Litehouse Bleu Cheese Vinaigrette Dressing
1/2 cup of Blue Cheese Crumbles
Preheat oven to 375 degrees. Place asparagus in baking dish and cover with Litehouse Bleu Cheese Vinaigrette Dressing. Bake for 12 minutes or until spears are fork tender.
