Is it because it’s fall? Is it back-to-school? Why are we suddenly so crazy-busy? Â If your family is like ours, it’s been a struggle to get dinner on the table. Â We have been grabbing fast food and eating out because of our schedule. Â When Simply Potatoes asked me to make one of their “Simply-fied” recipes, I jumped on it. Â Perfect timing for us.
It was fun going through the recipes on the Simply Potatoes website. Â We have been eating Simply Potatoes for years and years. Â It’s the perfect go-to side dish. Â Comforting, delicious, and fast. Â Potatoes without peeling, slicing and dicing! Â I wanted to make something with an autumn feel to it, so when I saw this picture on the site, I knew I had my meal.
It looks healthy and delicious, but easy? Â Well I made a few modifications!
Shopping List
Rotisserie Chicken or Turkey Breast
Simply Potatoes Sweet Potatoes
Ready to Cook Green Beans
French Baguette
Already In Our Pantry
1/8 teaspoon Ground Ginger
1/3 Cup of Brown Sugar
1 Cup Mini Marshmallows
Follow the directions on the packages. Â For candied sweet potatoes, add the brown sugar and ginger to the Simply Sweet Potatoes and microwave per the package directions. Â Put mini marshmallows on top and place under broiler for a minute to melt and brown.
Depending on the strength of your microwave, this meal can be ready to eat in ten minutes! Â It’s a great hot meal, warm and cozy for a cool fall evening. Â How do you think mine turned out?
