Leftover Easter Eggs? Simply-fied Classic Potato Salad Recipe

I tried a new variety of Simply Potatoes today that makes cooking Potato Salad much simpler!  With Simply Potatoes Diced Potatoes With Onions, you can skip a big step and put fresh, homemade potato salad on your dinner table.

Ingredients

  • 2 packages Simply Potatoes® Diced Potatoes with Onion
  • 1/2 cup water
  • 2 cups mayonnaise or salad dressing
  • 1/4 cup yellow mustard
  • 2 tablespoons white vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 cups chopped celery
  • 1 medium red or green bell pepper, chopped (optional)
  • 6 hard boiled eggs, peeled, chopped

 

Directions

1. In 2 1/2 quart microwave-safe casserole dish* combine Simply Potatoes and water. Cover; microwave on HIGH 10 to 12 minutes or until Simply Potatoes are tender. Drain water.

2. Meanwhile in large bowl whisk together mayonnaise, mustard, vinegar, salt and pepper until smooth. Add cooked potatoes, celery, red pepper and chopped eggs. Stir gently. Refrigerate 1 hour to blend flavors.

Tips: To prepare hard boiled eggs, place eggs in 3 quart saucepan. Cover eggs with cold water. Bring water to a boil. Reduce heat to low. Simmer 15 minutes; drain water. Add cold water to saucepan. Let stand 5 minutes. Drain; peel and chop eggs.

* A 9-inch square baking dish can be used for a 2 1/2 quart casserole baking dish.

My tips and comments:

I made a 1/2 recipe just by dividing all the ingredients in half and it turned out well!  I like potato salad with a bit less dressing, so I didn’t use all of the dressing I made from the recipe.  I think next time, I would skip the whole step of mixing the dressing ingredients in a large bowl and just go ahead and mix it all in the same bowl to save some dishes!  One step I did add, was rinsing the cooked potatoes in cold water, before mixing in the dressing.  I also added carrots for some color (and because I just love carrots!).  I also garnished the old-fashioned way that my mom used to do, I put slices of hard-boiled eggs on the top and sprinkled with paprika.

Note:  If you have eggs you haven’t cooked left from Easter and boil them now, check the date and it should be fine for this recipe.  If you have colored eggs, boiled before Easter, they are most likely no longer good to eat.  Even when stored in the refrigerator, hard boiled eggs generally are fresh only for one week.  Always check your expiration dates on food, and better safe than sick!
