Everyone gets busy and it’s difficult to find time to get together. Â Especially in the fall, there is so much going on. Â We have some friends that we used to have fun with on “game nights”. but now it’s tough to find an open evening to get together. Â I had the idea to try a brunch! Â And what better way to celebrate the fall season with friends than some delicious pumpkin treats and coffee.
I love making waffles for company – it’s something that almost everyone likea to eat, but special enough because we don’t make them often. Â A fun twist? Â Add pumpkin! Â Mmmmm, mouth watering yet? Â Here’s my recipe for easy pumpkin waffles with a surprise ingredient.
Pumpkin Waffles
Ingredients
2 cups of pancake/waffle mix
1/4 cup of vegetable oil
1 egg
1 1/2 cups of Pumpkin Spice Coffee-mate
Directions
Heat waffle iron. Â In a large mixing bowl, make a well in the center of waffle mix. Â Add in oil and egg. Â Gradually add in Pumpkin Spice Coffee-mate while stirring in more and more waffle mix. Â Spray waffle iron with no-stick cooking spray. Â Ladle waffle mix in to waffle iron and cook. Â Optional, add walnuts.

Nothing says “morning” and brunch like a cup of hot, steaming coffee. Â I served my pumpkin waffles, with coffee, orange juice, and bacon. Â The coffee I used was Taster’s Choice in the individual packets. Â I put on the teakettle with boiling water and the Taster’s Choice packets were in the center of the table with cream and sugar, so everyone could make their own fresh cup whenever they wanted. Â Taster’s Choice comes in several different size packages which makes it convenient and easy to buy exactly what you need. Â It was a crowd pleaser and perfect way to celebrate friendship and fall.
Then we played some games – hey, no one said “game night” can’t be “game afternoon”! Â After lots of fun and laughter, we stopped for a sweet treat break and of course, more coffee! Â Keeping with the pumpkin theme, I made Pumpkin Cheesecake Bites that went perfectly with delicious, full-bodied, rich, Taster’s Choice, French Roast.
Pumpkin Cheesecake Bites
Ingredients
(2) 8 oz packages of cream cheese
2 eggs
1 1/2 cups of sugar
1/3 cup of Pumpkin Spice Coffee-mate
Whipped topping
Cinnamon sugar
Mini-muffin cups
Vanilla Wafers
Directions
With power mixer on medium speed, beat softened cream cheese and sugar until smooth. Â Add eggs and Pumpkin Spice Coffee-mate to make batter. Â Preheat oven to 325 degrees. Â Place a vanilla wafer wafer in bottom of each mini-muffin cup. Â Fill mini-muffin cup with batter. Â Bake 30 minutes until cheesecake is firm. Â After cheesecake cools, top with dollop of whipped topping and sprinkle with cinnamon sugar.
