With school back in session, days can be hectic!  After-school activities, homework, and bam! dinner time comes fast.  I wish I could say I prepared a week’s worth of meals on Sunday and just pulled a delicious home cooked meal out of the fridge, but I’m just not that mom.
A quick and easy meal for us is fajitas. Â We love Mexican food and I especially like the spicy beef contrasted with the freshness of the salsa.
Here’s the recipe!
Beef Fajitas
Ingredients
1 pound of beef (I recommend top sirloin which is a very tender cut of beef)
1Â large green peppers
1 large yellow peppers
1 large red peppers
1 medium white onions
1 packet of fajita seasoning mix
3 tablespoons of olive oil
Flour tortillas
Toppings:
Sour Cream
Lettuce
Salsa
Guacamole
Sides:
Rice
Refried Beans
Directions
Cut the beef, peppers, and onions into thin strips. Â Follow directions on the fajita seasoning mix in skillet. Â Add beef first and cook until no pink remains. Â Remove from skillet. Â Add peppers and onions and cook until soft. Â Add beef back into skillet and cook both together for two to three minutes.
Throw a brightly colored table runner on the counter, line up your “Fiesta Buffet”. Â Let family members assemble and enjoy!
Tip: Â The thinner you slice the beef and vegetables, the faster they will cook.
A better cut of meat like the Top Sirloin will be more tender, even if sliced thin and cooked quickly. Â A cut like Flank Steak can also be used, but should be marinated and cooked more slowly to achieve the same tenderness.
