The sun is shining, the weather is warming up, and spring is in the air.  Nature is turning all the grays and browns of winter into bright vibrant colors of yellow, red, and green.  Mother Nature is telling us it’s time for Tampico Juice and a fiesta!
Start with Cinco de Mayo, but don’t stop there. Â The entire month of May is a time to celebrate spring. Â It’s all about color. Â Colorful decorations, food, and beverages put everyone in a fiesta mood. Â Oh, don’t forget Mother’s Day! Â Mom will love the fun of a fiesta!
For our fiesta, I picked up a colorful tablecloth, some simple decorations that double as fun activities, colorful Tampico drinks and made my favorite Chipotle Corn and Bean Salsa. Â The recipe is below, I hope you’ll give it a try and include it in your own Cinco de Mayo or anytime fiesta!
Chipotle Corn and Bean Salsa Recipe
Ingredients
6 tomatoes, diced
1/2 white onion, finely chopped
3 tablespoons fresh cilantro, finely chopped
juice of 1/2 lime
1 tablespoon chipotle in adobo sauce, finely chopped (to taste)
1/4 teaspoon of sea salt (to taste)
1/4 teaspoon ground black pepper (to taste)
15 oz. canned black beans (rinse with water)
15 oz. canned corn
Directions:Â Combine ingredients in large bowl. Â Garnish with lime and cilantro. Â Always serve with colorful Tampico punch!
For fiesta servings, place two tablespoons of salsa in a clear cup (to show off the colors!) with a few tortilla chips.
For an added twist, use salsa as a base for delicious nachos. Â Just layer chips, chipotle corn and bean salsa. Â Sprinkle with shredded cheese and broil in toaster oven. Â We have recently found that adding barbecue sauce and sour cream is a surprisingly delicious flavor combination!
For a fun decoration that doubles as a family activity, pick up brightly colored bubbles.

Thank you for the salsa recipe; I love corn and beans in salsa :) I’ve not tried the Tampico. I see it in the stores but never bought it. Maybe this Cinco De Mayo I’ll go get some :)
