Recipe: Fourth of July Cupcake Cones! Fun and Delicious with Domino Sugar Light

Exciting news for everyone trying to lose weight!  Domino Sugar has come out with a new product that has all the benefits of sugar AND those of stevia wrapped up on one.  It’s called Domino Light and it’s a blend of sugar and stevia.

Have you tried stevia?  It’s an all natural plant sweetener that has been used for centuries.  One of the major benefits of stevia is that it has no calories.  But for baking and everyday use, many of us are accustomed to the taste and characteristics of sugar.  By blending stevia and sugar, Domino has developed a product that has half the calories, but the taste and texture we are familiar with.

I’ve been looking for a fun dessert for the 4th of July, and when I saw Ice Cream Cone Cupcakes on the Domino recipe site, I thought how fun to substitute red, white, and blue sprinkles and Domino Light!

When you use Domino Light in a recipe, use 1/2 the quantity.  For example, the recipe called for 1 cup of Domino granulated sugar, so I used 1/2 cup of Domino Light.  It turned out fun and delicious!

Ice Cream Cone Cupcakes

Ingredients – Cupcake

  • 2 cups – cake flour
  • 2 tsp. – double-acting baking powder
  • 1/4 tsp. – salt
  • 1/2 cup – butter
  • 1 cup – Domino® Granulated Sugar (I used 1/2 cup of Domino Light)
  • 3 – egg yolks
  • 1 tsp. – vanilla or 1 teaspoon grated lemon rind
  • 3/4 cup – milk
  • (Note: substitute a yellow cake mix if you wish)
  • 24 – small ice cream cones

Cream Cheese Icing:

  • 1/2 cup – cream cheese, softened
  • 3 tbsp. – butter
  • 1 1/2 cups – Domino® Confectioner’s Sugar, sifted
  • 1/2 tsp. – vanilla
  • 1/4 tsp. – lemon juice
  • Jelly beans (I used red, white, and blue sprinkles)



Preheat oven to 350 F. Sift cake flour with baking powder and salt. Cream butter until soft.

Gradually add sugar and cream until light. Beat in egg yolks and add vanilla or grated lemon rind. Add flour mixture to butter mixture in 3 parts, alternating with milk. Stir batter until smooth.

Fill cones halfway with cake batter. Place cones upright in a mini muffin pan and bake at 350°F for 25-30 minutes.

Cream Cheese Icing:
Cream butter and cream cheese with flat spatula until well-mixed. Slowly add confectioner’s sugar and mix until completely blended with no lumps. Add vanilla and lemon juice. Spread icing on cupcake cones and top with jelly beans.
