I went to a blogger event recently where they served some delicious and smart hummus appetizers.  How can an appetizer be smart, you ask?  Well, first of all it’s healthy.  It’s smart at a cocktail party to reach for the hummus appetizer.  Your stomach and scale will thank you the next day!  And…. this is an important one… it’s easy to eat.  Yes, I am THAT guest who spills bruschetta all over herself.  The one who awkwardly shoves a huge appetizer in her mouth and then can’t answer your question for five minutes while I try not to turn red and choke, requiring the Heimlich maneuver in order to breath.  I appreciate, really appreciate, an appetizer than can be consumed with some semblance of grace.  That is a smart appetizer choice for me.

Hummus Cucumber Cradles
Skinnygirl Roasted Red Pepper Hummus
2 medium size cucumbers
Coarse Salt
Paprikash
Kale garnish
Step-by-Step Directions
Peel cucumber in stripes, leaving enough skin to hold pieces together and look fun!
Cut 1/4″ pieces. Â To get diagonal pieces, alternate straight and diagonal cuts.
Scoop out enough of cucumber to create a small indentation.
Fill with Skinnygirl Roasted Red Pepper Hummus.
Sprinkle with coarse salt and paprika on cucumber. Garnish with kale. Â Easy-peasey!
