“Whew!” That’s what I say every morning after my daughter leaves for school. Â My husband and I have tried everything from schedules, earlier bedtimes, screaming, and begging to make the morning more calm and approach a semblance of punctuality. Â What works best? Â A combination!
My daughter and I worked together on a timetable for the night before school. Â It includes setting out clothes, brushing teeth, etc. with bedtime as the final goal. Â Then we created a timetable for the morning. Â She likes to wake up gradually (don’t we all), so we have a “first call” and “final notice”.
But I’ve recently found something that works like a charm. Â Don’t judge… Â shhhh, it’s bribery. Â But in a good way…. really!
How many times have you dumped cereal into a plastic bag and thrown it to your kid as they rush out the door? Â Be honest! Â Well, I’ve found something that not only gets my daughter out of bed in the morning, but also makes me feel better about the nutritional value of her breakfast. Â It’s easy to make, portable, and delicious. Â Win-win-win!
Here’s my recipe for Huevos Rancheros To Go, inspired by Campbell’s Kitchens. Â Try waking up your child by saying, “If you get downstairs 15 minutes before you are supposed to leave for school, you can have Huevos Rancheros.” Â Let me know if it works!
Huevos Rancheros To Go
Ingredients
- 4 eggs (approx 1 egg per taco)
- 1/3 cup of 2% milk
- Pace Picante
- Shredded Taco Cheese
- Salt and Pepper
- Tortillas
- Pat of Butter
Optional:
- Chopped Cilantro
- Lime
- Avocado Wedges
Directions
- Â Make scrambled eggs. Â I take one egg per taco, wisk in a bowl, add milk. Â Put a pat of butter into a warm pan, add eggs, stir with a spoon or spatula.
- Assemble the tacos by putting a line of eggs down the center of the tortilla. Â Leave a space at the bottom to fold up. Â Sprinkle on salt, pepper and shredded taco cheese. Â Generously add Pace Picante sauce. Â Fold over sides and bottom of tortilla and enjoy!

Sounds good, none of my kids liked to eat breakfast, the best I could hope for was passing out poptarts on the way to the bus.
This only works if they will eat eggs, but looks good to me!

We make something similar to this quite often for supper, we call them breakfast burrito’s. My girls aren’t big breakfast eaters, they’re happy with bagels & cream cheese.
