These are two of my favorite Nutrisystem lunches, Beef Vegetable Soup and the Chicken Fajita Melt.
On the Nutrisystem plan, for lunch, you are supposed to eat:
- Nutrisystem Lunch Entree
- Dairy or Protein
- Vegetable
- Vegetable (with 2 tbsp fat free dressing, if desired)
This is what I created with those guidelines! Yummy, no?
Chicken Fajita Melt Lunch
Ingredients:
- 1 frozen Chicken Fajita Melt Sandwich
- 1/2 cup of fresh salsa (tomatoes, onions, cilantro)
- Celery Sticks
- 1 oz. low fat shredded taco cheese
Instead of chips, use celery sticks to “dip” into salsa. Melt cheese on top of melt sandwich.
Beef Vegetable Soup and Salad
Ingredients:
- 1 serving of Beef Vegetable Soup
- 1/2 cup of steamed mixed vegetables
and sliced carrots- Romaine lettuce
- Baby spinach
- 2 tbsp of fat-free Italian dressing
- a bit of diced Red Pepper
- 1 hard-boiled egg
When you open the Nutrisystem Beef Vegetable Soup, at least for me, it is not all that appetizing looking. But, I love vegetables and a Nutrisystem lunch should include two vegetable servings, in addition to the entree. I add steamed mixed vegetables and carrots (they are one of my favorite vegetables) to the soup and water. Season with pepper and voila! A beef vegetable soup that I enjoy very much. Add a salad of romaine and baby spinach with some red pepper for color. The Nutrisystem Dairy or Protein serving can be a hard boiled egg – perfect addition to the salad.
