Chili is one of our favorites for weekend football nights! Being on the Nutrisystem plan didn’t stop me from enjoying a delicious chili dinner with the rest of the family. This is how I do it. If you’re looking for a way to make a quick and easy meal, this is also an easy way to use simple add-ins and turn canned chili into a fresh, delicious meal.
Ingredients:
- 1 can of prepared Chili with Beans
- 1 cup of Diced Tomatoes with Green Peppers and Onions
- 1/4 cup of Diced fresh Green Pepper
- Diced, Raw Onions to taste
Stir together the Chili and Tomatoes in a microwave safe bowl.
Cook on high power for one minute. Make sure to cover loosely with a paper towel, tomato sauce tends to “pop”.
Garnish with peppers and onions.
The Nutrisystem plan suggests this combination for your dinner meal: Your Nutrisystem Dinner Entree, 2 Vegetable Servings, 1 Fruit or Vegetable and 1 Fat. The tomatoes, green pepper and onion count as 2 1/2 Vegetable servings. I usually serve a salad and low fat dressing (counts as my fat) with the chili for a filling and healthy meal!
On to dessert! Again, this is my Nutrisystem food, but if you are not on Nutrisystem you can substitute something comparable from your grocery store. I saved a bit of fruit and yogurt from my afternoon snack to add to my Nutrisystem pound cake and, voila!
Ingredients:
- small serving of Pound Cake
- 16 blueberries
- 3 tablespoons of light blueberry yogurt
