Strawberry and Brie Bruschetta with #CaStrawberryTour

At the California Strawberry Tour Event, I was given a cookbook, “Strawberry Recipes for Everyday”.  I am, by no means, even an amateur chef.  My favorite food is ASEM – Anything Someone Else Makes.   But for some reason, the recipes in this cookbook grabbed me.  Maybe because I love fruit… or because they looked fairly easy but very delicious.  Whatever the reason, in just a few days I’ve made three of the recipes!

The first recipe I tried was Strawberry and Brie Bruschetta.  I’ve never made bruschetta before and was surprised how easy it was!

Slice French Bread - 1/2" Slices

Butter Bread and Bake at 375 Degrees for 5 minutes

While bread is toasting, mix brown sugar, cinnamon, vanilla. Slice brie cheese and strawberries.

Sprinkle sugar mixture on bread, add slices of brie, sliced strawberries and almond slivers. Bake for 3 minutes to melt cheese. Voila!

Maybe all those hours watching Food Network are paying off, hehehe.

Here are the ingredients from the cookbook.  I simplified the directions a bit, combining a few steps.  Just follow the pictures above and it will be “delish”!

Ingredients

12 slices French bread, cut 1/2 inch thick

1/3 cup butter, softened

1/3 cup packed brown sugar

2 teaspoons ground cinnamon

12 slices (about 12 ounces) of Brie cheese

1 1/2 pounds (about 4-5 cups) sliced stemmed California strawberries

1/2 teaspoon vanilla extract

1 cup sliced almonds, toasted

      I was surprised at the brown sugar and cinnamon combination and then combining that with brie? But it was an AWESOME combination! Who knew, right?

    OK I must be very sheltered. OR poor? I have never tried brie before but those luscious strawberries make me want to! I love almonds too! I think even my youngest daughter would love to try this, even on a mini bagel? thanks for posting!

      Or your normal just haven’t spent alot of time in the cheese section at the grocery store! :)

      Brie is a French cheese that comes in a round shape (or cut into wedges). The outside is white and the inside is a creamy-ish yellow. It has a bit of a sour taste that *warning* can be addictive, yummmmy! It’s safe to eat the outside white part, some people do, some don’t – I’m in the middle, I usually leave a bit on but don’t eat all of it. If you don’t like the first bite, don’t give up, it’s kind of an acquired taste.

    I have never made bruschetta with fruit before. This looks amazing! It would be a great party food!
