I found a delicious recipe for Strawberry Cheesecake Bites in a cookbook called, “Strawberry Recipes for Everyday”.  Well, I don’t eat strawberries stuffed with cheesecake everyday but I would like too :)

Ingredients

8 oz. whipped cream cheese

1/3 cup powdered sugar

2 teaspoons lemon juice

16 whole California Strawberries

8 graham cracker squares, finely crushed

Preparation

Mix cream cheese, powdered sugar, and lemon juice in a bowl.  Set aside.

Cut stems off California Strawberries.  Using a paring knife score the center of the strawberry without going to the edges.  Use a spoon to scrape out the middle of the berry.  If you have a melon baller, that’s what the cookbook recommends to use.

Fill the berry with they cream cheese mixture.  Dip into graham cracker crumbs.

 

Voila! Strawberry Cheesecake Bites!
