Sunshine Snickerdoodle Cookies with McCormick Extracts and Food Color – Create Your Own Spring Look Book!

Spring is the perfect time to bake fun, pretty, (and of course delicious) treats!

McCormick inspired me to make these Sunshine Snickerdoodle Cookies!

Sunshine Snickerdoodle Cookie Recipe

Ingredients:

2 1/4 cups of all purpose flour

2 cups of granulated white sugar

1/3 cup yellow sugar sprinkles

2 sticks (1 cup) of unsalted butter

2 eggs

2 teaspoons of baking powder

1/2 teaspoon salt

1 teaspoon McCormick lemon extract

1 teaspoon McCormick vanilla extract

6 drops of yellow McCormick food color

Directions:

1.  Preheat oven to 400 degrees.

 

2.  In a medium bowl, combine flour, salt, and baking powder.

3.  With electric mixer, combine room temperature butter and add eggs and 1 1/2 cups of sugar (rest of sugar is for coating).  Beat 2 -3 minutes until smooth.

4.  Add in the flour mixture and yellow food color.  Beat until well mixed.

5.  In a shallow bowl, mix yellow sugar and 1/2 cup of white sugar.

6.  Using a teaspoon of dough, roll 1 inch balls in the sugar to coat.  Place on nonstick cookie sheet about 2 inches apart.  Use the bottom of a glass, to flatten each ball.

7.  Bake for 8-10 minutes.  Snickerdoodles are soft on the inside and firm on the outside, so remove immediately from the cookie sheet and place on wire rack to cool.

To make the colored coconut “grass”, put coconut into a ziploc bag.  Add a few drops of green food color.  Knead and shake until color is evenly distributed.  Don’t mush it, but mix and then spread on plate as garnish and to dry.
