Valentine’s Day is right around the corner.  How do you celebrate? Valentine’s Day is the perfect day for a enjoying a delicious, special brunch and this year it falls on a Sunday!
I whipped up some Orange Blossom Crepes and they would make a yummy addition to your brunch Valentine’s Day celebration. Â The key to this delicious brunch is the crepe filling. Â It’s made with cream cheese, Tampico Mango Punch, and a touch of sweetness. Â Tampico Mango Punch combines Oranges, Tangerines and Mangoes. Â Garnish with a slice of orange and some powdered sugar and you have an amazing treat! Â I decorated with some candles and flowers to give the meal a little Valentine romance.
Crepes are much easier to make than you would think. Â They add a flare to your meal without a lot of difficulty or complicated ingredients.
Orange Blossom Crepes
Filling Ingredients
1 package of cream cheese
1/3 cup of Tampico Orange Mango Juice
1 tablespoon of sugar
Filling Directions: Â Soften cream cheese. Â Combine ingredients and mix on medium speed until smooth.
Crepe Ingredients
1 cup flour
2 eggs
1/2 cup milk
1/2 cup Tampico Orange Mango Juice
Crepe Directions:  Add flour to a large mixing bowl. Make a well in the center of the flour. Add the eggs to the center of the well. Using a fork beat the eggs and gradually add flour from the sides. When it starts getting thick, start slowly adding the milk and Tampico Orange Mango Juice.
Mix well, crepe batter should be slightly thinner than pancake batter.  Preheat a frying pan. If you want brown-cooked spots on your crepe, put a small amount of butter in the pan. If you like golden crepes, use a nonstick pan and no butter. Pour in about 1/4 cup of batter – how much you need depends on the size of your pan, this is where the practice comes in! Pick up the pan and twirl it so that the batter covers the bottom of the pan. If it doesn’t quite make it, next time use more batter. If it’s too thick, next time use less.
When the top is fairly solid, it means the downside is done. Using a pancake turner, flip it over. Give it a few more minutes, check, and take out when done.
Place filling in the center of each crepe and fold in sides. Â Garnish with bits of fresh orange and a twist. Â Sprinkle with powdered sugar.
And of course, serve with a cold glass of Tampico Orange Mango juice. Â The vibrant color of this delicious drink will brighten your table. Â Enjoy!

Boy these bring back memories. I haven’t made crepes since my daughter was a little girl many years ago and she really loved them. I really like this recipe and will have to make them and surprise my daughter and grandchildren with some homemade crepes.

I just love crepes, although I haven’t tried making them myself. When I was in high school, there was a Magic Pan restaurant by us and my friends and I went there weekly. More recently I’ve been getting my crepes at IHOP. I really want to try making them myself. I know they aren’t that hard, and there are so many ways to fill them. My imagination is running wild with possibilities.
